Bread is one of the oldest known recipes to man. It has been around for several millennia.
The recent low-carbohydrate craze has given bread a bad reputation, but not all breads are created equal. There are more varieties of bread than there are supplement companies. This article will explain the history of bread, the types of bread, and the role that bread can play in the quest for good health and a better body.
The History of Bread
It is estimated that the first bread was made around 10000 years BC or over 12,000 years in the past. This bread was more than likely flatbread, similar to a tortilla, made simply of ground grains (flour) and water that was mashed and baked. The first tools and implements used in the making of bread are dated to about 8000 years BC.
Egypt is attributed with popularizing the art of making bread. Egyptians are considered to be the agricultural pioneers of the old world, probably benefiting from interactions with Samaria. The closed oven was invented circa 3000 BC and allowed for more varieties of bread to be produced. It is around this time that leavened bread is first described, that is bread, bread with yeast added so that it would rise during production. Refined grains were considered superior and therefore were prevalent in the higher courts, so the poorer populations used barley and sorghum in their breads.
Around 1000 BC the Mosaic laws were introduced. These laws, in the books of Leviticus and Deuteronomy, contained instructions to the nation of Israel regarding proper food preparation. When the Hebrew people fled Egypt during the legendary Exodus, they were forced to make unleavened (flat) bread in their haste. Leviticus declares a feast commemorating the exodus using flatbread. Bread is a common symbol of bounty in the bible – Leviticus 21:22 declares, "He shall eat the bread of his God." When the people of God were lost in the wilderness, they were fed manna, which was described as bread from heaven. The Christian Savior, Jesus Christ, is called the "Bread of Life".
The bible also gives one of the earliest recipes for sprouted grain bread. It reads, in Ezekiel 4:9-17: "The thou also unto thee wheat, and barley, and beans, and lentils, and millet, and fitches, and put them in one vessel, and make thee bread thereof, according to the number of days that thou shalt lie upon thy side, three hundred and ninety days shalt thou eat thereof." While more than a year of nothing but this bread sounds like quite a marathon diet, analysis of products today using the same recipe show that it was a well-balanced, nutritious bread that yielded plenty of protein, fiber, carbohydrate, and healthy fat.
In 400 BC, around the time when Socrates was providing sage dietary advice, Plato imagined an ideal world. In this world, men would live to a ripe old age. Their main source of sustenance would be whole grain bread from local wheat.
168 BC saw the establishment of baker's guilds in Rome. Bread even played a major role in politics when, in 40 BC, as part of a campaign, it was decreed that bread should be freely distributed to every male adult.
In 1202 AD, English laws were passed to regulate the production of bread. While many people are aware of the differences between whole grain (brown) bread and white breads, few realize that it caused quite a stir in 1307 when the white bread bakers and brown bread bakers split to form separate guilds! It was not until two centuries later, in 1569, that the guilds were reunited and called the "Worshipful Company of Bakers."
As early as 1826, the whole grain bread used by the military was called superior for health to the white, refined bread used by the aristocracy. In fact, the term refined today comes from this fact. Before the industrial revolution, it was more labor consuming (and therefore costly) to refine bread, so white bread was the main staple for aristocracy. This made them "refined".
In 1910, Americans were eating 210 pounds of wheat flour every year. The commercial bread-slicing machine was invented in 1912 by Otto Rohwedder, and unveiled in 1928. The 1930s saw the United States pursue a diet enrichment program to begin fortifying breads with vitamins and minerals after their discovery in the late 1920s. In 1941, calcium was added to help prevent rickets, observed in many female recruits to the military. In 1956, it became the law to enrich all refined breads. By 1971 consumption of white bread had dropped to around 110 pounds per year, but by 1997 (possibly due in part to the low fat, high carbohydrate craze and the food pyramid) consumption was up to 150 pounds – still 60 pounds shy of the fit, trim Americans at the turn of the century.
Types of Bread
There are many types of bread. This is by no means an exhaustive list.
In the most basic form, grinding grains, adding water, and heating it produces whole grain flatbread. Whole grain bread is similar, only yeast is added so that the bread rises. White bread starts out similar to whole grain bread. The grain is processed, however. The hard, outer portion of the grain is stripped, removing fiber and many vitamins, minerals, and healthy fats that are naturally available. The remaining portion is ground to a fine powder, the enriched with a generic spray of vitamins and minerals. This is then used to bake the bread.
Spelt bread is a grain-bread, but made from special wheat that does not contain gluten. Gluten, a form of protein, is a common allergen and gluten intolerance or allergies are quite common.
Since whole grains are not sweet, sourdough bread is simply wheat bread with no sweetener added. Once a sweetener is added – often high fructose corn syrup in commercial breads, but typically brown sugar, honey, or molasses in fresh baked breads – it becomes the typical bread you are used to buying.
Varieties such as oat, barley, rye, kamut, triticale, millet, and even rice bread are simply variations using different grains other than traditional wheat. Sometimes seeds and spices are added, creating varieties such as basil, garlic, onion, or cinnamon bread.
Sprouted grain bread has increased in popularity in recent years. Traditional bread is made from ground flour from the hardened kernel of grain. Sprouted grain bread involves soaking the grain and allowing it to sprout. The sprouted seedlings are then mashed together and baked. Sprouting allows the enzymes in the grain to convert some of the carbohydrates and fats to vitamins, minerals, and amino acids. Due to the changes that take place, sprouted grain bread typically is higher in protein, fiber, and certain vitamins and minerals than regular bread. It is also less refined and processed than even stone ground wheat bread, so it has less of an impact on your blood sugar.
Bread and Nutrition
Many commercial types of bread are highly refined. Enriched breads have the original nutrients stripped out and replaced with inferior, often lesser quantities of standard vitamins and minerals. Some companies will try to produce wholesome-looking bread by adding grains to the outside, even when the main ingredient is enriched bread. High fructose corn syrup is often added as a sweetener.
The first thing to look at when purchasing breads is the ingredients list. Look for breads where the very first ingredient is "whole grain" or "stone ground" rather than "enriched" (even if whole grains follow the enriched flour ingredient). Look for natural sweeteners like molasses or honey over high fructose corn syrup. Preferably, the sweetener and salt should be last on the ingredients list. If you consume high quantities of bread or keep the bread refrigerated, it will last longer and you can purchase fresher varieties that do not contain additives or preservatives. The most basic ingredients list will look like this: whole-wheat flour, water, salt. There should be a few grams of protein and fiber per slice – low protein and/or fiber is a sign of excessive processing that has stripped these nutrients, and implies that the other nutrients will be missing as well.
Rye bread typically contains moderate portions of protein and fiber per slice. A 100-calorie slice will contain a few grams of protein, a few grams of fiber, around 20 grams of carbohydrate, and decent amounts of calcium and iron. The addition of flaxseed increases protein and fiber (for the same 100 calorie slice) but also adds trace amounts of health, unsaturated fats.
There are actually some amazing bread recipes that can be very beneficial for the bodybuilder. This power-packed ingredients list provides a 100-calorie slice of bread with essential fatty acids, 5 grams of fiber, and 8 grams of protein to only 11 grams of carbohydrate. It is abundant in over 13 vitamins and minerals. Compare this to a typical slice of white bread, which contains no fiber, trace amounts of protein, and double the carbohydrate.
Summary
Bread has been around for ages. While trends such as low carbohydrate nutrition or low fat dieting come and go, bread is here to stay – people "earn their bread" or "bring the bread home" and are constantly looking for the "best thing since sliced bread". Before eliminating bread from your program, consider the many types of bread that are available and decide if there is one that suits your needs. Bread can increase your protein intake, add fiber to your diet, refill you muscles by supply quality carbohydrate in addition to healthy fats, vitamins, and minerals. Drink water.

Are you trying to lose weight?
If you are, STOP!
Funny thing to say coming from someone that wants to help you lose all the weight you want, right?
Actually, there's a good reason.
You see, you can't try to lose weight. Don't believe me?
OK, let's use an example. Look around where you are sitting right now and find a small object. Perhaps a pen, envelope or book. Got it?
Now, try to pick it up. Go ahead.
Is it in your hand? If it is, well, then you didn't try, you actually picked it up. If it's not in your hand, you didn't.
Simple, right?
There's no middle ground in doing. You can't "try" to do anything, it's a fallacy. You either do it, or don't do it.
The same applies to losing weight (or anything else for that matter). Saying that you'll try gives your mind fuzzy instructions, and it will return fuzzy results, results that aren't what you really want. It also gives you a "way out" if you don't achieve the goals you set out to reach.
You see, your subconscious mind doesn't interpret your directions, it just goes to work following them as complete truth. When you say you'll "try to lose weight", it will "try" to follow your instructions, which we now know is impossible.
What in fact you want, (if you really do) is to lose weight. To feel better. To have more energy. To overcome health challenges. To look great.
Now, if you say you want to lose weight and are not successful, or continue to use language that includes words like "try" or "we'll see" or "maybe", perhaps you're wired backwards.
What does that mean? Well, maybe you say that you want to lose weight, but your mind says it doesn't. Somewhere along the way you gave your mind instructions that it's too hard, or impossible, to lose the weight you want. Perhaps you're more comfortable where you are now, but know that it's the right thing to say that you want to lose weight.
If this is the case, ask yourself what beliefs you hold that are at odds with what you want. For example, "it's too hard to lose weight", "it's impossible to lose weight", "I can't lose weight because I'd have to exercise all the time", "I'll lose my friends if I lose weight", "I can't lose weight because I've always failed".
Ask yourself if in fact they are true. Are they making your life easier, or more difficult? Do these beliefs serve you or harm you?
Then, replace the old beliefs with new ones. Positive, confident statements about how you want to look and feel.
The best way to lose weight is to avoid saying you'll "try" to lose weight, and say you "will" lose weight. See yourself at your ideal weight. Imagine how great you look and feel. Use positive language and give your mind specific instructions like "I'm now happily at my ideal weight of (number of pounds) weight" or "I now happily choose to wear a size (your ideal size)".
Watch your language and self talk closely and avoid using "try". It may take constant attention at the beginning, but after a short time, you'll get used to keeping your language positive, upbeat and confident.
Your weight loss results will follow immediately, depending on how confident, committed and persistent you are in applying these exercises. The more confident, committed and persistent, the faster your results will appear.

3) Develop a consistent routine of waking up and going to bed at the same time everyday, even on the weekends. It alters your body clock and will only worsen your insomnia. If you can't sleep one night, get up at the usual time the next morning. You'll be sleeping soundly the next night.
4) Relax, stay healthy and fit. Avoid a stressful lifestyle. Engage in activity and exercise daily to release tension. Practice deep breathing exercises to relax your body often.
5) Don't force yourself to sleep. Trying your best to sleep requires some work. You don't want to work when you want to doze off. Sleep comes best if you are in a relaxed and comfortable state. Just lie down, relax, and let yourself fall into sleep naturally.

Looking for a culprit? Consider that pharmaceutical company profits are so large they outstrip every other American industry by far. Americans spend over $500 billion on drugs. The drug companies claim that they need large earnings ($124,835,595,000 in 1999, for example) to conduct their research, but just one of every five dollars the drug industry collects actually goes to drug research. Some drug companies spend twice as much annually for marketing and advertising. From the years 1996 to 2001, pharmaceutical companies spent $3 billion on consumer advertising. Many of the advertised pharmaceuticals are not (contrary to popular belief) FDA-approved, and the information contained in the advertisements is often misleading and not entirely accurate. Now there is even a new wave of drugs being marketed to alleviate the side effects of other drugs being marketed (e.g. NexiumTM to relieve digestive problems created by pain killers).
Pharmaceutical companies have enormous influence on physicians through the billions of dollars of marketing resources. Drug companies in the U.S. spend, on average, $10,000 each year per physician to influence their behavior through subsidizing studies in major journals, aggressive marketing by drug reps (in some instances trained exactly how long to shake a doctor's hand), advertisements and sponsorship of medical education programs for doctors and medical residents. (Such support of education and science subtly brainwashes physicians into thinking symptom-based medicine is sound knowledge and science as well.) Is it any surprise that two thirds of visits to doctors' offices result in a drug being prescribed? Some patients may be on numerous medications prescribed by various specialists while not one of them knows, or could even predict, the health consequences of the interactions. (I recently discovered that my elderly mother, suffering from a variety of ailments, including dementia, was on 17 different medications. Not only did she not know what she was taking or when she did, neither did any of her physicians.) Aside from profiteering and marketing, the most fundamental flaw in the system is philosophical. Doctors and pharmaceutical companies think about names of diseases and removal of symptoms, not cure or prevention. They chase, but the race is rigged so they never catch.
Enabling such a system to prosper and flourish is a public that also has a flawed philosophy. They want to live life as they choose, carpe diem, thinking only of momentary relief, pleasure and convenience. When something goes wrong with their health they don't want instruction on how to change lifestyle, but rather want to use the power of money (preferably the government's) to buy their way out with a silver drug bullet that immediately takes the problem away. We spend much for dying, little for living.
American health will continue to slip and our economy will continue to be drained by a failing healthcare system until the underlying flawed philosophies are changed. Medicine must change from naming diseases and treating symptoms to prevention and cure. Yes, that means the medical care system should be trying to put itself out of business, not create a growth industry of illness.
On the other hand, people must change by taking the responsibility for controlling their own health destiny. As it stands, the public has become a pawn of commercial medical interests.
Ultimately health is something we do to ourselves, not something others do to us. When that fact is faced, the medical-pharmaceutical complex will shrivel to a cottage industry and the public will be the better for it. Perhaps one of the most insidious dangers in modern technology is medical testing. Although it would be nice to be able to visit our doctor and get all hooked up with electrodes, inflatable cuffs, probes, needles and catheters and have a read-out telling us exactly how we are working and where there is a problem, that is a myth, not the reality.
Such testing creates false confidence and the illusion for people that they are being wise and practicing "preventive medicine." But prevention is not detecting existing disease. Diagnosis is not to be confused with cause or cure. Not only do patients have these misconceptions, the entire medical industry does as well. Modern medicine is focused on naming diseases and treating symptoms, not preventing disease and addressing causes.
Medical tests (done on yourself or by others) give a false sense of control and knowledge. The better choice is to take every step we can to modify life-style and nutritional habits to actually create health, not simply live life with gusto and have yearly stress tests and mammograms. Waiting for disease (reacting to injury, which disease is) to strike and then taking action is certainly not an intelligent approach.
None of this speaks to the waste in much of the $200+ billion a year that is spent on laboratory and clinical tests. Not only do they drain our economy and not create health, they are often inaccurate and unnecessary. Some 75% of doctors surveyed admitted to performing more tests than necessary. In one study of 25,000 tests, only 20% of them reproduced the same result 90% of the time. In another study, 197 out of 200 were "cured" by simply repeating the same tests. (Wysong, RL. This brings me to a serious danger of laboratory testing: a false positive or false negative. If the test is falsely positive, the emotional trauma from believing you may have a serious disease can be enough to create a disease. Thus a test can make a well person sick. A false negative could send you on your way happily believing that everything is fine and that no life modifications are necessary. Meanwhile, the disease continues to incubate and spread.
Medical tests have inherent dangers like any other medical procedure and should be submitted to only with that understanding. Even entering a hospital or doctor's office poses the risk of exposure to infectious disease (nosocomial infection). A "sterile" needle to draw blood could result in a fatal (albeit rare) systemic infection. Squeezing breasts for a mammogram can activate dormant cancerous tissue and increase the spread of cancerous cells (metastases) by 80%. (Greenburg, DS. NCI blasted for mammography confusion. The Lancet. 345(8942): 129.) Pap smears are performed millions of times a year yet have never been proven to change morbidity or mortality. (McCormick, JS. Cervical smears: a questionable practice? The Lancet. 2: 207-209. 1989.) Ultrasound may influence fetal growth. (Newnham, JP, et al. Effects of frequent ultrasound during pregnancy: a randomized controlled trial. The Lancet. 342(8876): 887-91.) X-rays are always dangerous (carcinogenic) and their effects are cumulative over a lifetime. Vaginal and rectal exams can introduce infection. Cancers penetrated with biopsy needles may increase the spread of cancer to sentinel lymph nodes by as much as 50% over lump excision. It is estimated 1 in 20 liver biopsies result in new tumors. (Evans, GH, et al. Safety of and necessity for needle biopsy of liver tumours. The Lancet. 1: 620. 1987.) Let the buyer (patient) beware.
Health is something you do to yourself, not something others do to you with machines or analysis. Health "by the numbers" of cholesterol, blood pressure, prostate antigens, white cell count and the like is a fantasy. Subscribing to this idea will start you on a slippery slope of medications, medications to treat the side effects of medications, surgeries and other interventions that destroy health, not build it.
This is not to suggest that diagnostic tests are not important for refractory diseases or those to which no reasonable cause can be assigned. But as a "preventive" measure for healthy individuals the benefits of the practice are dubious at best. The best test of health is to evaluate yourself. If you feel well, leave well enough alone, no medical test should convince you otherwise. The best test is to examine your life-style and nutritional practices against the standard of genetic context. We are adapted to fresh air and water, sunshine, exercise and fresh natural foods. The Case AGAINST Raw Frozen Pet Foods

For some 25 years I have alerted the public to the dangers of exclusively feeding heat processed foods. Companion animal feeding has progressed – actually digressed – from table scraps and real foods the family could spare to today's "100 % complete" processed foods in primarily kibble form, with some canned and semi-moist also available. The foods appear to be scientific and improved, but they're far worse for the animals. Not only is nutrient value diminished by heat, but a spectrum of toxins is created. Additionally, the singular feeding of processed food has led to the spurious "100% complete and balanced" claim that is both logically and scientifically flawed.
Entrepreneurs have seized upon this information to create a spate of raw frozen (RF) foods to capture a market niche and to fill the demand from consumers wanting a raw alternative to standard heat processed canned, semi-moist and dried pet foods. This market trend, as with most others, may begin with some truth (raw food is the best food) but gets distorted, if not perverted, once economic opportunity enters the picture. This paper will examine the rationale of these products, their economics and dangers. A more intelligent and healthy alternative will be proposed.
Dangers
1. Weakened Pets And Highly Virulent Organisms – A raw state and the presence of moisture in food provide the perfect environment for the growth of pathogenic organisms. Although prey foods in the wild often putrefy and are teeming with microorganisms, carnivores in the wild are immunologically adapted to these organisms and even benefit from the probiotic effects of some. On the other hand, domestic pets eating sterilized heat processed foods are immunologically compromised and are threatened by mutated and highly virulent pathogenic strains created by modern circumstances and antibiotic resistance. Freezing at appropriate temperatures puts pathogens in a state of arrest but does not eliminate them. Although all foods contain some pathogens, unless they are sterilized (requiring high heat or other measures that greatly diminish the nutritional value and create toxins), it is the load of these pathogens that must be of concern to consumers. RF foods are a potential reservoir and vector of large numbers of pathogens.
2. Producers With Only Kitchen Technology – Because of the minimal technology required to produce a RF pet food, essentially anyone regardless of credentials or expertise can bring a product to market. All one needs to do is grind and mix ingredients in a kitchen, package and put in a freezer. There are no controls over the conditions in the kitchen, the quality of the ingredients or the method of freezing. All these factors can dramatically influence the nutritional value and pathogenic and toxic content of the food. But being in a frozen state hides these potential dangers and therefore poses a threat to both pets and the humans who handle the foods. John Doe can make a food under unknown conditions and with unknown ingredients, label, package, freeze and deliver to consumers or stores without one single control monitoring or impeding the process. Regulators may eventually examine the label if they happen to see it in a store (they will never see it if shipped directly to consumers) and object to some terminology or the like; but, all John needs to do is change the label and all will be well. The product could contain every manner of ingredient, be laced with virulent pathogens, and receive the aegis of regulators … and into the market it goes.
3. Raw Frozen Foods Are Not "100% Complete" – Many RF foods make (or imply) the same spurious 100% complete claim as heat processed foods and thus carry with them the same health dangers. Feeding any food exclusively, let alone a nondescript packaged food containing who-knows-what from who-knows what manufacturing environment, is a bad choice if health and safety are of concern. 4. Problems Are Ignored By Producers – RF food pathogens include not only bacteria, but fungi, viruses and parasites. Toxins include those from molds (mycotoxins), bacteria and those created by oxidation. In our study of RF products in the stream of commerce, not one producer addressed these concerns with any technological know-how that we could discern, and most did not even acknowledge the problems potentially lurking in their foods.
5. Freezing Masks Inedibles – Raw meat and organ tissue continues to use ATP (source of energy) until it is exhausted and the tissue enters a state of rigor. Endogenous enzymatic activity within the tissue continues to digest the muscle tissue (proteolysis), softening it until it becomes tender and develops the typical palatable taste. This process is retarded by cold. The freezing of properly aged meat presents few problems, however, any residual ATP present in the tissue during freezing will contract the muscle upon thawing resulting in a more unpalatable product. Mixed RF foods would hide this problem.
6. Free Radical Problems Masked – Essential fatty acids and other health enhancing lipids are critical in the diet. Once foods are ground, mixed, exposed to air, light and pro-oxidants such as heme iron and other metals found in plant and animal tissue, the contained lipids are oxidized to chain reaction producing free-radicals, causing rancidity and oxidant toxins. Freezing at appropriately low temperatures slows this process but does not stop it. The temperature in conventional freezers used for RF foods is not insurance against such oxidation. Because the frozen state masks olfactory detection of rancidity, foods that would be otherwise rejected end up being consumed. The free-radical pathology potential can then work its chronic degenerative disease and immune weakening effects.
7. Freezer Burn Indicates A More Serious Problem – Air reaching the meat surface is the cause for the freezer burns that result in the typical grayish-brown leathery spots. Frozen water on the surface or just beneath it sublimates (from solid state directly to vapor) into the air, causing moisture to be lost from the meat over time resulting in discoloration and a dry, leathery texture. Proper packaging helps maintain quality and prevent freezer burn, however most packaging is permeable to air. The prevalence of freezer burn in RF products speaks to the fact that the product is being oxidized and with that creating free radical toxins to lay the seeds for various degenerative diseases.
8. Display Packaging Causes Free Radicals – Light, as well as air, can promote free radical production. Retail display packaging that is clear or light permeable permits light to catalyze the free radical (disease promoting) process.
9. Frozen Products Are Not Inert To Degradation – In frozen storage there is deterioration in organoleptic quality – meat texture, fat turning granular and crumbly, and discoloration. Microbial enzymes also remain active, especially lipases that break down fats increasing their susceptibility to oxidation.
10. Frozen Foods Can Lead To Acidemia – Tissue degradation and oxidation under high heat freezing (above 29° F), which occurs along the supply chain with most RF products, also leads to acidification. Increasing acid consumption can contribute to acidemia that lies at the base of virtually every chronic degenerative disease plaguing modern pets. (See reference below.)
11. Temperature And Time Are Critical – Ice nucleation, as opposed to ice crystallization, is the primary vector in producing a stable, tasty, frozen product. Freezing is a technically complex process based on the optimum combination of temperature and time, amongst other factors. In the wrong processor's hands, slips in proper freezing care can lead to a microbiologically unstable product and/or a sensory inferior one. Rapid freezing leads to nucleation, thereby preventing undesirable large ice crystals from forming throughout the product. With rapid freezing the molecules don't have time to form positions in the characteristic six-sided snowflake, so nucleation overrides crystallization. On the other hand, slow freezing (the usual RF situation) creates large ice crystals, which on thawing causes cellular damage to the meat. This in turn causes meat to "drip" – lose juiciness – and form a perfect liquid medium for bacterial growth.
12. The High Risk In Thawing – Thawing is another critical phase in the freezing process as it involves a change from crystal ice to melted water, which upon reabsorption results in microbial reactivation. Pathogenic bacteria inherently contaminate raw meat, fish, and poultry and will begin to multiply again when the temperature reaches just 29.3є F – which is below freezing! Thus a product that may appear subjectively frozen could be a veritable incubator of pathogens. When consumers attempt to thaw RF foods, dangers dramatically increase. The surface temperature rises long before the interior is sufficiently thawed to serve. For example, it takes about 15 hours for the middle of a 22-pound turkey to get to 32є F. In the interim the surface temperature rises to 53є F. In this amount of time there would be about 4 multiplications of spoilage bacteria as well as non-detectable multiplications of pathogens. The FDA Model Food Code (1999) recommends that food be thawed in the refrigerator or in flowing water. Thawing RF food in the refrigerator can be inefficient and time consuming, in addition to occupying refrigeration space required for other food items. Most of all, this lengthy procedure can lead to the risk of cross-contamination when the drip from the raw meat comes in contact with ready-to-eat food stored in the refrigerator. In the alternative, consumers usually put the RF food out at room temperature, creating the perfect circumstance for pathogen proliferation.
13. Undetected Freeze-Thaw Cycles – The transit time of RF food from the processor (or John Doe's kitchen) to the distributor, to the stores and eventually to the consumer is very critical. Although freezer delivery trucks might putatively maintain stable product temperatures, lack of thermocouples fitted in the truck to show temperature readings, and/or inadequate TTIs (time-temperature indicators) can lead to microbiologically infested products without any visible spoilage signs. If the refrigeration in any part of the supply chain fails temporarily and then goes back to frozen (freeze-thaw-freeze), the consumer would never know of this abuse and danger.
14. Supply Chain Time Dangers – Time is the enemy of nutrition and safety. The longer the time between the farmer's field and the belly, the greater the potential problems. RF foods create the illusion that time is not a factor. Because the frozen state masks toxins and odors, the consumer can be given the impression of value and freshness when, in fact, they may be getting age and toxicity.
15. Microwave Thawing Dangers – If RF foods are thawed in the microwave as a matter of convenience, the value of the food is greatly compromised. Microwaves can virtually boil the liquid phase within cells and electromagnetically alter important food components rendering them not only useless nutritionally, but toxic as well.
16. Mycotoxins Go Undetected – RF foods, particularly those that are a mix of cooked grains (which of course negates the claim for "rawness") and vegetables, can contain mycotoxins. None of the producers surveyed addressed this problem.
17. Frozen Product Mixtures Make No Health Sense – In an attempt to cover every conceivable base and not miss any opportunity for profit, many RF producers mix every manner of ingredient. For example, watermelon, grains, persimmons, liver, lamb, etc. Not only would creatures in the wild never eat such a mixed gruel at one sitting, such combinations in the fresh state can cause serious digestive stress. Many of the exotic RF ingredients do not keep well in the fresh frozen state (for example, freeze watermelon alone and see what happens, let alone combining it with meat). Also, the combination of fruit sugars with proteins can potentially create toxins such as glycation end products, acrylamides (particularly in those "RF" foods containing cooked carbohydrates) and reaction products of proteins with plant tannins, phenols and flavonoids. Producers "throwing the book" at RF formulations in desperate attempts to capture market share make evident their motives and their scientific, health and technical naivetй.
18. Parasites Are Ignored – A wide range of parasites can be found within RF foods. Although there is technology in terms of freezing and natural ingredients that can be used to thwart this problem, none of the producers examined employed any of it that we could detect.
Packaging
The best packaging for any food, particularly RF foods, is light- and oxygen-barrier and modified atmosphere flushed. In the absence of this, oxidation proceeds rendering the lipids toxic. None of the producers surveyed employed these technologies that we could detect. Even if they did, the other problems and dangers listed above would remain.
Environmental
We live in an age of pollution and energy diminishment. RF foods require a tremendous amount of refrigeration and equipment all along the supply path. Freezing is energy inefficient and consumes valuable energy resources. Since RF foods are 70% water (at least) there are huge resources wasted in freezing and transporting the tons of this food-contained water through the supply chain. Along with all the equipment, trucking, freezing and frozen water handling inefficiency comes the pollution that parallels such industry.
Quality
In order to make their foods anywhere near affordable, RF producers must search the ingredient market for items that can carry the name of real food but may in fact be only a hollow shell of the real thing. Inferior meat and organ ingredients, heat processed grains and vegetable riffraff (for example "broccoli" on a label may really be broccoli stems – like eating a branch from an apple tree rather than the apple) are used because they are of low cost. That is not to say the marketing brochures and labels do not make it appear as though the brand is not a true gourmet meal. If one reviews the various labels it becomes clear that the race is on to see who can put the fanciest and most exotic ingredients on labels ... as if that is the road to pet health. (It is not.) In a brief ingredient survey this is what we found:

Organic beef, rabbit, chicken, turkey, goat, lamb, duck, pork
Organic honey
Organic papaya, persimmons, blueberries, oranges, apples, pears
Organic yogurt
Organic alfalfa, millet, quinoa and barley sprouts
Wheat grass
Nettles
Bok choy
Cultured kefir
Cod liver oil
Capsicum
Watermelon
The reader is challenged to go to the store and total up the cost of such ingredients. Some of the organic ingredients can cost over $15 per pound. But the RF diets containing them can retail for as little as $2-4 per pound. Take away margins for distributors and retail stores and the producer is selling them wholesale for close to a dollar per pound. Now on top of the cost of ingredients is the production, advertising, packaging, freezing and in some cases a sales force making six figures. Something most certainly does not add up. The only thing that can be missing is true ingredient quality. But how can the label say these expensive ingredients are in the food? All the producer needs to do is put in pinches of the expensive ingredients just to say they are there.
The only economic hope for a RF producer is to create the perception of "value added." They simply could not put the costly ingredients in the food to any degree and make a profit for themselves and all the middlemen up and down the chain. The price they would have to charge would be ridiculous. In effect, in order to be successful, producers must become accomplished at propaganda, not health and nutrition.
Consumers interested in cutting through to the truth do themselves and their pets a service by going to the grocery store with a list of the ingredients ostensibly in a RF diet. Although some RF diets in the lower price range appear to not be attempting to mislead, consumers should do the math comparing the exotic ingredients in RF pet foods to the prices for the real thing in the store and decide for themselves whether either value or honesty resides in RF products.
Economics
Consumers are under the mistaken assumption that a nondescript package mix of ingredients with an officious label and from a producer posing as a nutritional authority (none of the producers we examined had people at the helm with expertise or credentials) would be the best choice. Little do they realize that they could avoid essentially all of the caveats listed above by simply going to the grocer and buying fresh meats and produce. Pets do not require every nutrient in existence at every meal, as is the impression given by the 100% complete RF producers, and for that matter the rest of the pet food industry. Why would people choose to pay a producer to mix inferior ingredients, package them, label them, freeze them, transport them, advertise them and pay the margin for the producer, the distributor, sales force and the retailer when they can avoid all that cost and put their money into real quality fresh foods? Some people are so convinced that RF manufacturers perform some sort of magic that they will pay to have such foods put in special insulated containers packed with dry ice and overnight delivered! This is particularly ridiculous when one considers that no real convenience – and certainly no health or nutritional value – is added in the process. The consumer still has to go to the store and buy something.
At the grocer a person can buy fresh, raw, untainted meats and produce appropriate for pet carnivores at less than $1 per pound. Slightly out-of-date meats, sale items, trimmings or other still excellent products that cannot be put in the meat case can be even less. True, if you are to purchase the ingredients listed above in perfect human grade organic form (as many RF producers boast) the cost could be far greater. But at least you would know what you are getting. RF foods can cost as much as $7 per pound with an average of about $3-4 per pound (not including shipping to the customer's door) and most of that cost is going into freezing, transportation and profits through a whole chain of participants. Here is a case where a consumer gets to pay more (a whole lot more) and get less (a whole lot less). Isn't marketing a wonderful thing?
A Better Alternative
Fresh foods fed in variety are without question the perfect form of nutrition. Appropriately designed supplements to help reduce the risk of food-borne pathogens and oxidation, and to help balance high meat meals and provide a spectrum of vegetable-based nutrients and nutraceuticals can also be of great benefit. Anything less than this is a compromise. The next best alternative is packaged dried raw foods that have incorporated in them food technology to impede pathogens, parasites and oxidation. The low water activity of these products is a great inhibitor of pathogens and the low level of moisture make storage and shipping efficient and environmentally friendly. Good quality table scraps and properly designed dried extruded and canned foods can be mixed into the diet rotation with benefit as well.
Consumers must learn the principles of fresh foods fed in variety and to trust in nature. Every pet owner desires the best for a beloved pet, and is correct in thinking food is an essential element in achieving that goal. But it is incorrect to believe that another person can do more for their pet's health than they can do themselves. All that is required is a little understanding and use of common sense.

Anabolic Hormones - A Two-Edged Sword

When I was a young boy, emerging muscles were the coolest thing. If a vein popped out a little, that was even more awesome. There were no fitness centers or body building gyms to amount to anything back then (Stone Age). If you aspired to brawn, Charles Atlas paraphernalia advertised in comic books was guaranteed to help you turn the cards on the guy who kicked sand in your face on the beach last summer.
Back then, muscles seemed more legitimate if you earned them from work on the farm or from other labor. Muscles from exercise were thought of as sort of "artificial". So I did lots of farm work and construction in the summers. But leaving nothing to chance, I also cheated by building my own weight set with a pipe that I would insert into the holes of cement blocks.
My dad was of the school that I had better be careful or I could get all "muscle bound" if I exercised too much. I guess he must have worried as he saw me in the back yard hoisting my pipe with blocks dangling from each end. But I loved the exercise and reveled in the pumped feeling in my biceps.
Sorry to sound so narcissistic. But it's the way all of us "guys" thought. We would even compare bumps on the school bus every morning and banter about who could do the most push-ups. This is not to say muscles and fitness are still not important to me, but now I focus primarily on exercise that will help me stay healthy, in shape and trained for the competitive sports I play.
I bring this up not to brag or appall you, but as a backdrop for the current situation in the sport and bodybuilding worlds. Now that society is off the farm, exercise has become a perfectly legitimate way to replace the physical activity lost with modern living. The use of hormones to force the body to grow in a way it would never do naturally, however, is a perversion of what should be clean and healthy personal development. Anabolic hormones totally miss the point of it all. The freaky bodies that can result are aberrations, yet magazines are filled with their photo spreads as if drug induced bodies are icons we should emulate and aspire to.
Aside from the fact that only people with natural bodies and developed talents should compete in sports (otherwise drugs are competing, not athletes), the real tragedy is the toll on health any hormone can take. Of all the drugs I used in medical practice, hormones scared me the most. They could create dramatic and immediate results (and that is their allure), but hormone treatment continued for any length of time always seemed to come back to harm the patient and haunt me.
An example in humans is the use of testosterone patches in women to increase libido. Take them very long and although your passion may be triggered, your voice will deepen and a beard will start to grow (not so good for the libido of the husband). Corticosteroids for allergies can result in extremely serious adrenal gland diseases, immune suppression and vulnerability to infection. In veterinary medicine the same things can happen. One situation I am reminded of that occurred many years ago was related to hormones given to dogs for birth control. Years after discontinuing the drugs, treated dogs would present to veterinarians with life threatening illness, extreme thirst and white blood cell counts off the charts. When their enlarged abdomens were surgically explored, a gigantic uterus would be found filled with pus – quarts of it! All this just because a little ole hormone was given years ago without a hint of an immediate ill effect.
You see, the body is extremely wise. It is not fooled or endlessly forgiving. If you break your arm and put it in a sling, the muscles don't grow bigger, they atrophy. Why? Because the body is also efficient. Why grow muscles or even maintain them if they are not needed? When the sling is removed, the arm will have lost much of its strength. The body shuttled its resources into building bigger muscles in the arm that had to do double duty. It's a very pragmatic thing. The body doesn't pay attention to your agenda; it just does what it must to stay alive, make do and meet stress.
The same thing would happen to both arms – to your whole body – if you had servants do everything for you as you reclined in an easy-chair. Then, if all of a sudden you had to get out of the chair and run a mile or lift 200 pounds to survive, you wouldn't make it. Your wasted and weak body could not rise to the challenge.
Hormones are like a metabolic sling placed on the hormone producing glands—testicles, ovaries, adrenal, thyroid, pituitary, etc. They replace the hormones that the glands normally produce. When this happens there is a negative feed-back: the more hormones from the outside that are introduced into the body, the less the glands do what they no longer need to – synthesize hormones. So the metabolic "muscles" (glands) that create hormones atrophy. If all of a sudden the outside source of hormones is withdrawn, your weak and withered organs may then not have the strength to take up the task again and supply hormones. Since about every function in the body is hormone-influenced, and every hormone interacts with every other hormone in some way, catastrophe results. Is it any wonder that modern anabolic body builders are also racked with heart disease, cancer, immune disorders, digestive failure and metabolic disorders in their (early) later years? The use of anabolic hormones is most certainly a case of desire being a ruinous tenant of its landlord, the body.
Consider this also with regard to anabolics. A normal body weight of 170 lbs. can be changed to 250 lbs. of solid muscle. To get there, massive amounts of food have to be consumed. Yet digestive "muscle" is not being built to keep pace, So the digestive tract and associated organs (liver, pancreas, gall bladder) suited for maintaining a 170 lb. body is forced to digest and assimilate extremely large amounts of food? The result is digestive exhaustion and resultant damage that can last a lifetime. Most of us suffer some digestive problems and intolerances as we age due in large part to eating abuses when we were young. Note the number of television commercials hawking stomach remedies. Body builders force feeding can exaggerate this damage leaving a ruined digestive system tolerant of little more than Maalox..
A huge number of high school kids are trying to "get big" with steroids. What an incredibly dangerous proposition for them. Parents, be aware that this is not innocuous. If the plea is that a little won't hurt, particularly if they are "cycled" properly, don't buy it. If the argument is that taking them is the only way to excel in a sport, then change sports. Insist.
For you adults who are toying with the idea of taking hormones for one reason or another, think long and hard. Read the contraindications and cautions on the drug insert sheets. Take heed. Find other ways to stimulate your body's own natural ability to enhance or improve itself through exercise, lifestyle and nutrition. Don't put your organs in slings and then expect long-term benefit.
The piper will always be paid.
